Instructions:

3. Cook the Shallots and Mushrooms: Using the same pot, add the minced shallots and sauté them until they turn translucent. Then, stir in the chopped mushrooms, cooking them until they release their moisture and begin to brown.
4. Prepare the Sauce: Sprinkle the flour over the shallots and mushrooms. Stir well to coat the vegetables. Slowly pour in the port wine, stirring to deglaze the pot, scraping up any browned bits stuck to the bottom. Let the mixture simmer for about 2 minutes to allow the flavors to meld.
5. Add the Broth and Chicken: Pour in the chicken broth, stirring everything together. Place the browned chicken pieces back into the pot, submerging them slightly in the liquid. If desired, add a sprig of thyme for extra flavor.
6. Pressure Cook: Switch the Cookeo to “Pressure Cooking” or “Fast Cooking” mode and cook for 15 minutes. This will ensure the chicken is tender and juicy while absorbing the rich flavors of the sauce.
7. Finish the Sauce: Once the cooking time is complete, carefully open the Cookeo and remove the chicken pieces. Stir in the thick sour cream to the sauce, mixing well until you achieve a smooth, creamy consistency. Sample the sauce and modify the seasoning with salt and pepper as necessary.
