Instructions:
Preparing the Eggplants:
- Slice or cube the eggplants, then arrange them on a baking sheet. Brush with a little olive oil and roast in a preheated oven at 200°C for about 20-25 minutes, until tender and lightly browned. You can also pan-fry the pieces in oil if you prefer a quicker method.
Cooking the Meat:
- In a large pan, heat some olive oil and sauté the finely chopped onion until it becomes golden brown.
- Add the chopped garlic and stir briefly to release its aroma.
- Incorporate the ground meat, breaking it into smaller pieces with a spatula, and cook until browned. Season with salt, pepper, cumin, and paprika.
Adding the Chickpeas:
- Once the meat is almost done, stir in the drained chickpeas and cook for a few minutes to absorb the flavors.
Making the Yogurt Sauce:
- In a bowl, mix the Greek yogurt with lemon juice, a pinch of salt, and tahini (if using). Drizzle a bit of olive oil into the mix to smooth out the sauce.
Assembling the Dish:
- In a baking dish, spread the roasted eggplants as the base.
- Layer the meat and chickpea mixture over the eggplants.
- Pour the yogurt sauce evenly on top.
Garnishing:
- For extra flavor and texture, garnish with toasted pine nuts, chopped parsley, and crispy pita pieces if desired.
Final Baking:
- Bake in a preheated oven at 180°C for about 15 minutes, allowing the dish to heat through and the flavors to meld.
Serving:
- It can be served either warm or cooled down, depending on your preference.
Tips:
- You can add other Lebanese spices like sumac or za’atar for more authentic flavor.
- For a vegetarian option, omit the meat and increase the chickpeas or add vegetables such as zucchini or bell peppers.
