Cranberry-Marshmallow Sweet Potato Casserole

Ingredients:
- 6 pounds of sweet potatoes
- 1 cup self-rising flour
- 1 cup packed light brown sugar
- 1 cup butter, divided
- 1 (7 oz) jar marshmallow creme
- 2 teaspoons vanilla
- 1 teaspoon salt
- 1 cup fresh cranberries
Directions:
- In a large pot, boil the sweet potatoes until fork-tender, about 25-30 minutes. Drain and let cool for easier handling.
- While potatoes are cooling, mix flour, brown sugar, and 1/2 cup of cubed butter in a large bowl. Use your fingers or a pastry cutter to blend the butter into the flour until it forms crumbs. Spread the mixture on a baking sheet and freeze until ready.
- Preheat oven to 350°F. Peel the sweet potatoes and mash them in the pot. Stir in the remaining melted butter, marshmallow creme, vanilla, and salt until smooth. Spread this mixture evenly in a 3-quart baking dish.
- Remove the crumb topping from the freezer and sprinkle it over the sweet potato mixture. Add cranberries on top.
- Bake for 45-50 minutes, or until the topping is golden.

To Reheat: After baking, cover and let it rest while the turkey cooks. Once the turkey is done, raise the oven temperature to 350°F, and bake the casserole for 20 minutes until fully reheated.
