- 1 sheet of shortcrust pastry
- 200g fresh goat cheese
- 2 eggs
- 200ml fresh cream
- 2 ripe tomatoes
- 1 garlic clove
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste

Instructions:
- Prepare the Base: Preheat the oven to 180°C (350°F). Roll out the shortcrust pastry into a round baking tin lined with parchment paper. Prick the bottom of the dough with a fork, and blind bake it for 10 minutes. This step prevents the base from becoming soggy when the filling is added.
- Make the Filling: In a bowl, beat the eggs with the cream. Add the crumbled goat cheese, minced garlic, and season with salt and pepper. Mix everything until smooth and well combined.
- Assemble the Quiche: Pour the egg and cheese mixture into the pre-baked pastry crust. Arrange thinly sliced tomatoes on top, slightly overlapping them. Drizzle with a little extra virgin olive oil.
- Bake: Bake the quiche for 30-35 minutes, or until the filling is set and the top is lightly golden.
- Serve: Let the quiche cool slightly before serving. Optionally, garnish with fresh basil leaves. It can be enjoyed warm or cold.
